Raspberry & Chocolate Vegan Banana Bread

I love banana bread and I love making banana bread. It is so therapeutic and makes the house smell amazing, but most importantly it's absolutely delicious.

But this time I wanted to change it up a bit, so did some googling and found Chocolate and Raspberry Banana Bread. However, I used my banana bread recipe (you can find it here) and made a few small changes.

You'll need:

  • 1 1/2 Cups of Plain Flour (I am using Rye Flour)

  • 3 heaped tsp Baking Powder

  • 2/3 Cups of Brown sugar

  • 3 tsp Cinnamon

  • 3-5 dark Bananas, mashed

  • 1/2 Cup of Melted Coconut Oil

  • 1/4 Cup of Dark Chocolate (I am using one bar of Magic Mayan, Always Almond)

  • 1 cup of Raspberries

  1. Pre-heat oven to 200 degrees Celcius.

  2. Mash the peeled bananas with a fork. Mix well with the coconut oil and sugar.

  3. Add the flour, baking powder and cinnamon, and combine well.

  4. Gently fold in the raspberries and chocolate chips.

  5. I placed a sliced banana on top for decoration.

  6. Baked in a greased and lined 2lb loaf tin for 20 minutes, before checking. Cover with foil, if the loaf cake is browning. Bake for another 30 minutes.

  7. Allow to cool a little before slicing. It's delicious freshly baked but even yummier when it goes gooey the next day

  8. Enjoy
