Turmeric & Ginger Energy Balls


These little energy balls are delicious :) and they have a very subtle spicey taste to them. They are so simple to make and you only need a few ingredients.

Turmeric has been talked about for a while now because it has many health benefits. Turmeric is derived from the underground stem of the plant Curcuma longa and the health benefits actually come from curcumin, which is the main active ingredient in turmeric. Curcumin has powerful antioxidant and anti-inflammatory properties.

Ginger also has great anti-inflammatory properties and has a soothing effect on the stomach.

Ingredients:

  • 1/2 cup cashews

  • 1/2 cup walnuts

  • 6 medium sized dates, pitted

  • 1/2 tablespoon ground ginger

  • 1/2 tablespoon ground turmeric

  • A pinch of salt

  • 1 tablespoon water

  • 1/4 cup shredded coconut

Method:

  1. Place the cashews and walnuts into a food processor and blend into crumbs.

  2. Add the dates into the food processor along with the ginger and turmeric.

  3. Blend until you have a smooth consistency.

  4. Add the tablespoon of water and blend again for 10-15 seconds, this will make the mix sticky.

  5. Roll evenly into balls

  6. Roll in coconut and enjoy
