I decided to make a pineapple cake last night, as always I made it only using a few ingredients and it was really quick and simple.
I know pineapple cake sounds a little odd but it actually turned out delicious.
2 free range eggs or 2 flax eggs (2 tablespoons ground flax seed mixed with 5 tablespoons water)
2¼ cup plain flour, I'm using Rye Flour
1 tablespoon of baking powder
1 teaspoon of baking soda
2 teaspoons of cinnamon (or more if you love cinnamon)
1/2 cup coconut oil, melted
1/2 cup white sugar
1 cup of blended pineapple
1/4 cup of chopped pineapple
Preheat the oven to 180 degrees Celsius.
If not using eggs, mix the ground flax seed with water and let sit for five to ten minutes.
Sieve together the flour, baking soda, baking powder and cinnamon into one bowl.
In a separate bowl, whisk together the melted coconut oil, sugar and blended pineapple. Add in the eggs or flax egg and fold in.
Pour the wet ingredients into the dry and mix together.
Lastly add the chopped pineapple and mix.
Pour the cake mixture into your cake pan and bake for 30-35 minutes until cooked.
I really hope you enjoy this cake as much as I did. It's delicious and cannot wait to make it again as it's already gone :) .
