Pineapple Cake


I decided to make a pineapple cake last night, as always I made it only using a few ingredients and it was really quick and simple.

I know pineapple cake sounds a little odd but it actually turned out delicious.

You'll need:

  • 2 free range eggs or 2 flax eggs (2 tablespoons ground flax seed mixed with 5 tablespoons water)

  • 2¼ cup plain flour, I'm using Rye Flour

  • 1 tablespoon of baking powder

  • 1 teaspoon of baking soda

  • 2 teaspoons of cinnamon (or more if you love cinnamon)

  • 1/2 cup coconut oil, melted

  • 1/2 cup white sugar

  • 1 cup of blended pineapple

  • 1/4 cup of chopped pineapple

Method:

  • Preheat the oven to 180 degrees Celsius.

  • If not using eggs, mix the ground flax seed with water and let sit for five to ten minutes.

  • Sieve together the flour, baking soda, baking powder and cinnamon into one bowl.

  • In a separate bowl, whisk together the melted coconut oil, sugar and blended pineapple. Add in the eggs or flax egg and fold in.

  • Pour the wet ingredients into the dry and mix together.

  • Lastly add the chopped pineapple and mix.

  • Pour the cake mixture into your cake pan and bake for 30-35 minutes until cooked.

I really hope you enjoy this cake as much as I did. It's delicious and cannot wait to make it again as it's already gone :) .
