Crunchy Orange and Coconut Granola


This yummy granola is my new favorite go to granola.

It's crunchy, sweet and so delicious! The mix of crunchy coconut chips and toasted oats with maple syrup and orange zest is just a dream.

I eat this for breakfast either with coconut yoghurt or sprinkled on porridge, smoothie bowls or chia puddings – it really tastes great with everything!

It's really simple and only needs a few ingredients!

You'll need:

  • 3 cups of oats, use whatever type you like best - I used 2 cups of regular oats and 1 cup of ISWARI Super Oats (these were more milled and gave it a smoother texture)

  • 1 cup of mixed nuts, I'm using pecans, walnuts and hazelnuts

  • 1/3 cup of coconut flakes

  • 1 Tbsp coconut sugar (optional)

  • 1/2 Tbsp flax seed (optional)

  • 1/2 tsp sea salt

  • 1/4 cup maple syrup, agave nectar or honey

  • 1/2 cup coconut oil

  • The zest of 2 large oranges

Method:

  1. Preheat your oven to 180 degrees Celsius.

  2. Place your nuts and coconut chips on a baking tray and place in the oven for 5 minutes

  3. Mix all the dry ingredients in a large bowl

  4. Chop up your nuts or blitz them in a food processor

  5. In a small saucepan, warm the coconut oil, maple syrup, agave or honey. Once the coconut oil has fully melted, remove from heat and mix with the dry ingredients together with the orange zest until well combined. Please be careful when zesting your oranges!!!

  6. Spread the mixture evenly onto one or two tray! Bake for 20 minutes or until golden brown. The coconut oil will help it crisp up well, but be sure to watch it carefully as it can brown quickly.

  7. Once the granola is visibly browned, remove from the oven and toss just a bit to let the heat escape. Cool completely and store in a container or jar.

So simple, and so tasty!
