Vegan Banana Bread


Happy Sunday guys!

Yesterday I decided to finally use all the bananas that I have been saving and make banana bread. It was the nicest banana bread I've ever had, and it's vegan, gluten free and full to the brim with bananas. Has anyone noticed how all my recipes are banana based? I think there is a theme going on!

It's crunchy on the outside and gooey on the inside. it's so simple to make and makes the kitchen smell incredible.

Ingredients:

  • 1 1/2 Cups of Rye Flour (or any other gluten free flour of your choice)

  • 3 heaped tsp Baking Powder

  • 2/3 Cups of Brown sugar

  • 3 tsp Cinnamon

  • 3-5 Black bananas, mashed

  • 1/2 Cup of Coconut Oil (make sure to melt it first)

  • 1/3 Cup of Chopped Walnuts

Method:

  1. Pre-heat oven to 200 degrees Celcius.

  2. Mash the peeled bananas with a fork. Mix well with the coconut oil and sugar.

  3. Add the flour, baking powder and cinnamon, and combine well.

  4. Add the chopped walnuts.

  5. I placed a sliced banana on top for decoration.

  6. Baked in a greased and lined 2lb loaf tin for 20 minutes, before checking. Cover with foil, if the loaf cake is browning. Bake for another 40 minutes (approximately).

  7. Allow to cool a little before slicing. It's delicious freshly baked but even yummier when it goes gooey the next day!
