Chia Seed Goodness


Happy Monday everyone. Monday can usually be one of the hardest days of the week for most people, they are restless after a jam-packed weekend, and the thoughts of another full week of work, college or school can be quite daunting! That’s why it is so important to start your week off right, with a nutritious (but delicious) breakfast.

My go to quick breakfast is chia pudding.

Chia seeds are incredible, these teeny tiny little seeds are full of fibre, protein, antioxidants, omega 3 and heart healthy fats. They regulate cholesterol, help with digestive health, they boost your energy levels and help with building muscle and losing weight.

Chia seeds are so amazing and so easy to introduce into your diet, that’s what makes them even better and they can be got from any health food shop or most supermarkets.

You can add chia seeds to smoothies, yogurts or porridge. These little seeds can expand to 10x their size in liquid, helping you stay full and avoid those mid-morning cravings. You can add them to water to help with your energy levels throughout the day or you can make a super quick chia pudding with them for breakfast or a quick but filling snack.

These layered chia pudding pots are so so easy to make, and did i mention how amazing they are for your health?

The bottom layer is an acai berry pudding, which is packed with acai berry powder for an extra kick of antioxidants. If you don’t have acai berry powder to hand, throw in any superfood powder you wish.

The top layer is a frozen berry smoothie, I love the texture of the two different layers, because sometimes plain chia pudding just doesn’t do it for me.

This recipe can be easily made in a jar for a breakfast on the go.

LAYERED CHIA PUDDING POTS

PREP TIME - 10 mins

COOK TIME - 2 hours

Bottom Layer:

  • 1/4 cup of chia seeds

  • 3/4 cup of nut milk

  • 3 tsp of acai powder

Top Layer:

  • 1/2 cup frozen rasperies

  • 1 frozen ripe banana

  • 1/2 cup of nut milk

  1. Mix all the ingredients in the bottom layer in a jar or bowl until well combined.

  2. Place this in the fridge overnight or for at least two hours until you have a thick texture.

  3. Spoon your chia pudding into a cup, bowl or jar.

  4. Blend all the ingredients of the top layer and carefully pour on top of your chia pudding.

  5. Top it off with some fresh fruit and enjoy!
